Usually 2' but up to 5' in length, pale brown in color.  Sturgeons are primitive fish, with a heterocercal tail. cartiligenous skeleton and bony plates along head and body.  they all have a sucker-like mouth underneath the protruding snout, which allows them to efficiently feed on the bottom.  Some species can attain huge sizes of over a ton, and some are anadromous when along the coasts.  Sturgeons are well-know producers of caviar.
