Watermelon Feta Kabobs
INGREDIENTS:
1/4 cup balsamic vinegar
6 cups diced seedless watermelon
4 ounces crumbled feta cheese
1/4 cup mint leaves
INSTRUCTIONS:
To make the balsamic reduction, add balsamic vinegar to a small saucepan over medium heat.
Bring to a boil until thick and reduced, about 4-5 minutes.
Place one watermelon cube on bottom, a cube of feta cheese, then a piece of mint, top with cube of watermelon.
Skewer stack, drizzle with balsamic vinegar.
Serve immediately

Entree:
Chicken, Havarti, and Sun-dried Tomato Wraps
INGREDIENTS:
4 (4 ounce) skinless, boneless chicken breast halves
8 sun-dried tomatoes (not oil packed)
1 cup boiling water
2 oz Havarti cheese
4 (10 inch) Ole tortillas
1/8 cup low-sodium chicken broth
2 tbsp pesto
DIRECTIONS:
Place chicken breast, sun-dried tomatoes, and low sodium
chicken broth in crockpot.
Cook on low for 8-9 hours.
Once cooked, shred and place in refrigerator.
When ready to assemble wraps,
spread 2 cups of chicken on toritilla,
add cooked sundried tomatoes, havarti cheese,and pesto.
Roll wraps into pinwheel, and cut however you would like.

Sweet Potato Salad
INGREDIENTS:
6 medium sweet potatoes
4 green onions
1red pepper
1/3 cup Greek yogurt
2 tbsp orange juice
1 tsp paprika
1/2 tsp cumin
1/8 tsp salt
1 tsp Pepper
DIRECTIONS:
Add peeled and cubed sweet potatoes to a
large pot of cold, salted water.
Bring to boil over medium-high heat and
cook the potatoes until tender.
Drain potatoes and let cool in colander.
After the potatoes cool, transfer to a large serving bowl.
Add Green onion (including part of white tops) and red pepper.
In separate bowl, add Greek yogurt, orange juice,
smoked paprika, cumin, and salt and pepper.
Whisk to combine, pour over the potatoes.
Thouroughly mix.

INGREDIENTS:
2 cucumbers
1 red onion
1 tbsp vinegar
1 tbsp lemon juice
2 tbsp Greek yogurt
1/2 tsp pepper
1/2 tsp sugar
1 tsp fresh dill
DIRECTIONS:
Using Vegetti sprialer, spiral cucumber and very thinly slice red onion.
Mix together.
In separate bowl add all other ingredients: vinegar,
lemon juice,
Greek yogurt, pepper, sugar, and fresh dill.
Mix both together, and stir thoroughly.

DESSERTS:
Orange Baked Alaska
INGREDIENTS:
1 pint orange sherbet
3 whole oranges, halves
3 egg whites
1/4 tsp cream of tartar
6 tbsp sugar
DIRECTIONS:
Scoop orange sherbet into 1/2 cup balls and place them on a plate.
Freeze until very firm, at least 4 hours.
Slice oranges in half across the center, and cut around edges with a small knife.
Remove the fruit and membrane. Save peel.
Preheat oven to 450 degrees.
In glass bowl or metal bowl whip egg whites in the sugar while continuing to whip until stiff and glossy.
Place orange shells on a baking sheet and place a ball of sherbet in each one.
Cover sherbet with meringue, SEALING the edges of the orange peel.
Bake for 5 minutes in preheated over, until browned.
Remove and Serve IMMEDIATELY.

INGREDIENTS:
1 package of chocolate sandwhich cookies
1/4 cup butter
1 package (8oz) cream cheese
1 cup powdered sugar
1 tsp vanilla
2 packages (3.9oz each) chocolate fudge pudding
3 cups 2% milk
1 container 12oz whipped topping
DIRECTIONS:
Put cookies in a food procceessor and process until they become fine crumbs, set aside.
In a large bowl, combine: butter, cream cheese, powdered sugar, and vanilla.
Beat on low speed to mix, then beat on medium to smooth.
Add chocolate pudding mix and milk to the bowl.
Beat on low speed to combine.
Fold in the whipped topping into the pudding mixture with a rubber spatula.
Assemble in an ungreased 9X13 pan in layers as follow:
cookie crumbs, pudding mixture, cookie crumbs, pudding mixture, until all added.
Chill for at least 3 hours before serving.
Add gummy worms if desired.
